So how do you all plan a trip? What do you look at to find the mist dirt? Me and mcnally are looking take a trip for probably three days in early December and want to stay off the beaten path as much as possible in new Hampshire and Maine but we don't know the best way to find trails or really the best areas to be in any help is really appreciated!

What do you look for in the atlas Single dotted or double wide dotted lines usually?

Double dotted are unimproved roads, generally dirt.
Single dotted are "trails". Not always passable, most are gated, blocked off or overgrown.

Southern Maine is pretty scarce for trails in comparison to the rest of the State of Maine. Its like two different worlds. Not saying they arent out there but the difference in population and agreeable land owners are two of the major factors.
